Gelatin Made from Human Collagen
Jul 17th 2011, 11:21

Soylent Green Jell-O? (Gisela Francisco)Ordinarily gelatin is made from animal collagen, a protein found in skin, bones, hooves, etc. The ACS or American Chemical Society reports a group of scientists have devised a process for making gelatin from human collagen. Thankfully, the process is a little less Soylent Green than you may imagine. The gelatin is produced using recombinant DNA technology. Genes for human collagen are introduced into a strain of yeast, allowing for the production of human-based gelatin with controllable properties. Lab-created gelatin, human or otherwise, would preclude the risk of infectious disease transmission that is present using an animal-based product. Also, human gelatin would be less likely to provoke an immune response in sensitive individuals, making it a superior choice not just for your favorite gelatin dessert, but also for medical applications. For more information about the process, read about the research in ACS's Journal of Agriculture and Food Chemistry.
