Ordinarily gelatin is made from animal collagen, a protein found in skin, bones, hooves, etc. The ACS or
American Chemical Society reports a group of scientists have devised a process for making gelatin from human collagen. Thankfully, the process is a little less Soylent Green than you may imagine. The gelatin is produced using recombinant DNA technology. Genes for human collagen are introduced into a strain of yeast, allowing for the production of human-based gelatin with controllable properties. Lab-created gelatin, human or otherwise, would preclude the risk of infectious disease transmission that is present using an animal-based product. Also, human gelatin would be less likely to provoke an immune response in sensitive individuals, making it a superior choice not just for your favorite gelatin dessert, but also for medical applications.
